Join the Localvore Movement: The Art of Eating Locally

Loyola Neighborhood News: Retreat and Ecology Campus - V3, I1

Are you curious about the Localvore movement? With the increasing trend in using locally grown ingredients and taking advantage of seasonally available foods, LUREC, in partnership with Loyola's School of Continuing and Professional Studies and Continuum program, now offers a series of adult-education courses focusing on how to choose locally grown foods, prepare nutritious and delicious meals, and preserve your harvest all year.

The first class in our Localvore series, offered on October 1, served as an introduction to the movement, addressing why we should eat locally and the importance of supporting local farms. A tour of the McHenry farmers market and subsequent cooking demonstration is included.

The program will continue to offer courses in all seasons of 2012. The upcoming spring class will explore how to create your action plan to eat locally throughout the year. The summer class will take you on a tour of the LUREC Sustainable Gardens and Farm, allowing you to gain hands-on experience harvesting and preparing foods. The program will continue into November, where you will learn how to prepare your garden for winter and preserve your harvest.
