Learn the Art of Eating Locally with Continuum

The growing trend of using locally grown ingredients and taking advantage of seasonally available foods has inspired Loyola's School of Continuing and Professional Studies and Continuum program, in collaboration with Loyola’s Retreat and Ecology Campus, to offer the Localvore: The Art of Eating Locally program. This series of adult-education courses focuses on how to grow, harvest, and prepare local and natural foods with sustainable practices.

The Localvore series is excited to offer the third session this summer entitled “Work in Your Backyard, allowing all interested to see firsthand how a sustainable garden works at LUREC. Community members are encouraged to explore the possibilities and rewards of living on the foods grown in the McHenry area.

This July, participants in the summer session will learn techniques and tricks for sustainable gardening, working alongside the Loyola community in the height of the growing system. Learning objectives will include teaching hands-on methods for organic farming, harvesting, and preparing fresh foods on an open-fire.

The Localvore program will continue to offer courses in all seasons of 2012. The next course will be offered this November, where participants will learn how to preserve the summer’s harvest and how to prepare a sustainable garden to survive the Illinois winter.
