Loyola University Chicago’s Retreat and Ecology Campus is excited to be hosting a series of culinary classes covering a variety of topics from Steakhouse 101 to Octoberfest. Led by Loyola’s Executive Chef and former Restaurateur, John Schnupp, the classes are designed to be hands on and create a true educational experience in culinary arts. Chef Schnupp earned his AOS from the Culinary Institute of America and brings a wealth of culinary experience (over 25 years!) to Loyola.

COURSE:  Father’s Day Brunch
DESCRIPTION: 
Celebrate Dad! Enjoy an expansive buffet of appetizers, entrees, side dishes, sweet treats, Mimosas and Bloody Mary’s in the majestic Searle Hall.
COST:  Adults- $39.95 per person, Children 5-12 years-$19.95 per person, 4 & under-free

COURSE:  Italian Inspired Food and Wine Pairing
DESCRIPTION: 
We will be pairing delicious Italian inspired food with sensational Tuscan wines of Italy. This evening starts with a wine reception with appetizers and proceeds with a five-course wine dinner.

COURSE:  Farm-to-Table Dinner: “Celebrating the Pig”
DESCRIPTION: 
Who doesn’t like pork and what it has to offer? This Farm-to-Table dinner will focus on utilizing local raised pork and the bounty of the LUREC farm paired with local micro/craft brews. This evening starts with an appetizer reception in the LUREC gardens and proceeds with a five-course dinner in Searle Hall.
COST: $80.00 per person; 40 people max.

COURSE: Steakhouse 101
DESCRIPTION: 
Learn how to prepare and cook steak at home like the famous steakhouses. This class will show how to choose the right cuts of beef for the right cooking application. Participants will also prepare steakhouse favorites such as Garlic Herb Compound Butter, Sautéed Spinach and Mushrooms, Caesar Salad and Loaded Twice Baked Potatoes. Local Craft Beers and selected wines will be offered.
COST:$65.00 per person; 20 people max.

COURSE:  A Taste of “Urban Street Foods” from Around the World
DESCRIPTION
:  Trying street food is an integral component of traveling to new places and it’s a delicious window into new cultures, a taste of human history. In many countries around the world, if you’re skipping what’s being served on the street, then you’re missing out on more than just a quick, cheap lunch.  In this class we will prepare classics like Bahn Mi, Durum, Suppli, Roh Jia Mo, Pork Satay, Tacos Al Pastor, Choripan, Crepes, Falafel, Jerk Chicken and Ceviche. Authentic libations will be served.
COST: $55.00 per person; 20 people max.

COURSE:  Farm-to-Table Dinner: “Pinn-Oak Ridge Farm Lamb”
DESCRIPTION:
Pinn-Oak Ridge Farms, located in Delavan, Wisconsin, will showcase their own, finest in the region, locally grown lamb. Each course will include lamb and will be paired with the best grape juices Napa Valley has to offer. This evening starts with a wine reception in the LUREC gardens with appetizers and proceeds with a five-course wine dinner in Searle Hall.

COURSE:  Farm-to-Table Dinner: “Vegetarian Harvest” & Montinore Wines
DESCRIPTION: 
Celebrate summer’s final harvest with an all-vegetarian dinner featuring LUREC’s organically grown produce paired with the wines of Montinore. This evening starts with a wine reception in the LUREC gardens with appetizers and proceeds with a five-course wine dinner in Searle Hall.
COST: $80.00 per person; 40 people max.

COURSE:  Bake Shop 101
DESCRIPTION:
  Learn the basics on how to bake fruit pies, tarts, eclairs and pizza dough! Lots of sampling and products to take home. Select beer, wine, soda, coffee and tea will be offered.
COST:$55.00 per person; 20 people max.

October Events

DATE/TIME: Saturday, October 8, 6:00PM-9:00PM
COURSE: German Beer & Wine FestOctoberfest”
DESCRIPTION: 
Celebrate the anniversary of King Ludwig I and Princess Therese of Saxe-Hildburghausen at LUREC’s Octoberfest. Traditionally a beer festival, this evening starts with a German beer reception with appetizers and proceeds with a five-course authentic Octoberfest dinner paired with German wines.
COST: $80.00 per person; 40 people max.

DATE/TIME:  Saturday, October 22, 11:00AM-2:00PM
COURSE:  Soup, Stews, & Stocks
DESCRIPTION:
  Learn the basics on how to prepare savory soups and stews. Prepare chicken, beef, and vegetable stocks and discuss their versatile uses along with proper freezer storage. Also, hone your knife skills. Lots of sampling with selected beer, wine and soda served.
COST: $55.00 per person; 20 people max.

Cancellation Policy: A two-week notice is required for cancellation of any class or event. If you do not cancel by email or telephone at least two weeks in advance of your scheduled class, we will charge your credit card in full for the class.
